Santa Maria-style barbecue is a regional culinary heritage. Rooted in the Santa Maria Valley in Santa Barbara County on the Central Coast of California, this method of barbecuing dates back to the mid-19th century. Today, Argentinian grills are regarded as a “mainstay of California’s culinary heritage.”
Santa Maria-style barbecue centers on a beef Tri-tip, seasoned with black pepper, salt, and garlic salt before grilling over coals of native coast live oak. Usually referred to as ‘red oak’ wood, favored for authentic Santa Maria style BBQ, but any cooking wood or charcoals will function with impressive results.
Sunterra Outdoor produces cart and non-cart versions of our Santa Maria “Cantilever” style barbecue grills. The front facing flywheel is manufactured in Galvanized Steel, while the side flywheel option is made in carbon steel and finished in red, satin black, or stainless. The Santa Maria “Cantilever” designs range in size from 48″ to 72″. For zone cooking, the “Cantilever” is made with two grates minus the center upright. Amazing results are achieved by the hand crank assembly’s chain drive lift system, which raises or lowers the grill grates over the coals to the appropriate distance from the heat. We have also incorporated a space inside the firebrick for sweeping the ash into an ash pan while grilling to facilitate ash removal.
Sunterra will on the original purchase exchange the steel grates with a stainless upgrade. Due to the robust construction and weight of our grills, we suggest an HD Caster and Tire upgrade, available in RED or GRAY and either 6″ or 8″ size. Simply, the grills are easier to move.
