Fried Green Tomatillo Sliders by Benjamin Maides, Chef, Au Courant Regional Kitchen, Omaha, Nebraska
Makes 16 sliders
- 1 cup mayonnaise
- 3 tablespoons relish
- 1 teaspoon tabasco sauce
- 1 tablespoon salt
- 1 tablespoon pepper
- 2 cups flour
- 1 cup egg wash (two beaten eggs, thinned slightly with water)
- 2 cups panko bread crumbs
- 4 green tomatillos, sliced
- 16 (2-ounce) Certified Piedmontese slider patties
- 16 slider buns
- 2 ounces your favorite microgreens (or substitute lettuce of choice)
In a bowl, combine the mayonnaise, relish, tabasco sauce, salt and pepper, and set aside. Set up three shallow bowls: one with flour, one with egg wash, and one with bread crumbs. Dredge each of the green tomatillo slices first in the flour, then in the egg wash, then in the panko. Heat a generous amount of oil to 350°F and fry the green tomatoes until golden. Grill the burgers to desired doneness and toast the slider buns. To serve, coat the top and bottom buns with the relish spread, top with burgers, fried tomatillos, and microgreens.
